Tofu is a great addition to a vegan's diet. There are quite a variety of options when buying tofu. There are several varieties, packaging options and prepared selections to choose from.

Varieties:

There are many forms of tofu. They range from silken to extra firm. Main options include:

  • Extra firm tofu: This variety is dense and firm and works well for recipes where you want the tofu to maintain its shape such as in a stir-fry.
  • Firm tofu: this variety also maintains its shape and works well in a stir fry or as a filler such as when substituting tofu for cheese in a stuffing.
  • Soft tofu: this variety works well when you want the tofu to blend in your recipe such as sauces and soups.
  • Silken tofu: this variety is the softest form of tofu. It can be used with sauces, soups and desserts.
Packaging options:

  • Fresh tofu: some Asian markets sell fresh tofu. It will be in a large container of water and you purchase the amount that you need. This tofu needs to be used right away but is the freshest option.
  • Water-packed tofu: This tofu is packaged in a plastic container filled with water. It's available at most grocery stores in the produce or Asian foods section of the store. This tofu needs to be used by the expiration date. You have a longer period to use this option than the fresh tofu but not as long as tofu packaged in an aseptic container.
  • Aseptic package: This tofu is packaged without water in an aseptic container. It's very convenient since it doesn't need to be refrigerated.
Prepared options:

  • Fried tofu: many Asian food stores sell tofu that has been sliced or cubed and fried. The tofu is crunchy on the outside and soft inside. It's convenient for adding to a stir-fry.
  • Baked tofu: is available in the health food section of most grocery stores, Trader Joes and some Asian markets. It has been sliced, marinated and baked. It's excellent for many options including sandwiches and adding to a stir-fry. There is usually a selection of different flavors.
  • Desserts: many Asian markets have a variety of tofu prepared for desserts. They are custard or pudding like. There is usually a selection of different flavors.
